Cold shrimp salad with dill and cucumber

Ingredients
- 300 g (2/3 lb) small, cooked shrimp
- 2 celery sticks, chopped
- 250 mL (1 cup) cucumber, diced
- ½ red onion, chopped
- 15 mL (1 tablespoon) fresh dill, roughly chopped
- 30 mL (2 tablespoons) lemon juice
- Zest of ½ lemon
- 30 mL (2 tablespoons) Selection olive oil
- Salt and pepper to taste
Preparation
- Roughly chop the shrimp. In a bowl, combine the shrimp, celery, cucumber, and onion.
- In another bowl, make the vinaigrette by combining the dill, lemon juice, zest, and oil.
- Add the dressing to the shrimp mixture. Season, mix, and refrigerate for 30 minutes.
- Serve on a bed of lettuce or with thin slices of baguette.
