Colourful quinoa salad (simple)

Ingredients
- 750 mL (3 cups) cooked quinoa, cooled
- 80 mL (1/3 cup) dried cranberries
- 125 mL (1/2 cup) edamame
- 125 mL (1/2 cup) shredded carrots
- 250 mL (1 cup) bell pepper, diced
- 2 scallions, finely chopped
- Honey lemon vinaigrette
- 60 mL (1/4 cup) Selection vegetable oil
- 60 mL (1/4 cup) Selection vegetable oil 60 mL (1/4 cup) lemon juice
- 60 mL (1/4 cup) lemon juice 22 mL (1 ½ tablespoons) Selection honey
Preparation
- In a large bowl, combine all the ingredients for the salad.
- In another bowl, combine all the ingredients for the vinaigrette.
- Pour the vinaigrette on top of the salad. Toss. Check the seasoning and serve.
