Asian-style salmon tartar

Ingredients
- 225 g (1/2 lb) fresh, skinless salmon fillet
- 1 scallion, finely chopped
- 15 mL (1 tablespoon) lime juice
- 5 mL (1 teaspoon) ponzu
- 30 mL (2 tablespoons) Selection mayonnaise
- 1 mL (1/4 teaspoon) sesame oil
- 5 mL (1 teaspoon) toasted sesame seeds
- Toasted slices of baguette
Preparation
- Over a cutting board, slice the salmon fillet into small cubes and place them in a medium-sized bowl. Add the scallion. In another bowl, combine the lime juice, ponzu, mayonnaise, and sesame oil.
- Add the vinaigrette and sesame seeds.
- Serve with a side of toasted bread.
- Note: the ponzu sauce is made with soy sauce and citrus flavours. As a substitute, you can combine 5 mL (1 teaspoon) soy sauce, 5 mL (1 teaspoon) orange juice, and 5 mL (1 teaspoon) lime or lemon juice.
