Asian-style salmon tartar

Ingredients

  • 225 g (1/2 lb) fresh, skinless salmon fillet
  • 1 scallion, finely chopped
  • 15 mL (1 tablespoon) lime juice
  • 5 mL (1 teaspoon) ponzu
  • 30 mL (2 tablespoons) Selection mayonnaise
  • 1 mL (1/4 teaspoon) sesame oil
  • 5 mL (1 teaspoon) toasted sesame seeds
  • Toasted slices of baguette

Preparation

  1. Over a cutting board, slice the salmon fillet into small cubes and place them in a medium-sized bowl. Add the scallion. In another bowl, combine the lime juice, ponzu, mayonnaise, and sesame oil.
  2. Add the vinaigrette and sesame seeds.
  3. Serve with a side of toasted bread.
  4. Note: the ponzu sauce is made with soy sauce and citrus flavours. As a substitute, you can combine 5 mL (1 teaspoon) soy sauce, 5 mL (1 teaspoon) orange juice, and 5 mL (1 teaspoon) lime or lemon juice.
