Tasty vegetable rice

Ingredients
- 375 mL (1 ½ cups) Selection basmati rice
- 45 mL (3 tablespoons) vegetable oil
- 680 mL (2 ¾ cups) Selection vegetable broth
- 1 bay leaf
- Ground pepper
- 125 mL (1/2 cup) Selection frozen peas
- 125 mL (1/2 cup) carrots, diced
- 125 mL (1/2 cup) onion, chopped
- 125 mL (1/2 cup) celery, chopped
- 125 mL (1/2 cup) red bell pepper, diced
- 250 mL (1 cup) mushrooms, quartered
- 2 ml (1/2 teaspoon) Chinese five-spice powder
- 60 mL (1/4 cup) Selection soy sauce
- 60 mL (1/4 cup) fresh cilantro, chopped (optional)
Preparation
- In a medium pan, heat half of the oil on medium and add the rice. Mix for 20 seconds. Add the broth, bay leaf, and season with salt and pepper. Cook on low and cover for 12 minutes or until the rice has completely absorbed the broth. Add the green peas two minutes before the end of the cooking time. Let cool.
- In a large pan, heat the remaining oil on high. Sauté the vegetables for 2 to 3 minutes.
- Season with salt and pepper and the five-spice powder. Lower the heat to medium.
- Add the rice and soy sauce. Heat for 1 minute and serve.
