Scallop, Shrimp, Pancetta and Grilled Pineapple Brochettes

Ingredients
- 60 ml (1/4 cup) Irresistibles olive oil
- 60 ml (1/4 cup) fresh pineapple juice or Irresistibles 100% pure pineapple juice
- 15 ml (1 tablespoon) minced garlic
- 5 to 7 ml (1 to 1.5 teaspoon) Selection crushed cayenne pepper
- 7 ml (1.5 teaspoon) Selection ground coriander
- 30 ml (2 tablespoons) fresh lime juice
- 15 ml (1 tablespoon) lime zest
- 30 ml (2 tablespoons) chives, snipped
- 12 g big scallops fresh or thawed and trimmed
- 12 big Selection uncooked and peeled shrimps, thawed
- 12 slices of pancetta
- 12 cubes of fresh pineapple of about 4 cm (1.5 in)
Preparation
- In a large bowl, mix the marinade ingredients (olive oil, pineapple juice, minced garlic, crushed cayenne pepper, ground coriander, lime juice and zest and chives).
- Place the scallops, shrimps and pineapple cubes in the marinade. Coat the marinade items well and let marinate in the refrigerator for 30 minutes.
- Preheat the barbecue to maximum intensity.
- Prepare 4 brochettes by alternating the scallops, shrimps, pineapple pieces and slices of pancetta. Fold them in 4 so they can stay in place on the brochettes.
- Place the brochettes on the barbecue’s warm grill and reduce the heat to medium.
- Cook the brochettes for 6 minutes or until the seafood is entirely cooked, turning them a few times while cooking.
- Serve immediately over vegetable rice and a green salad.
