Gourmet minestrone soup

Ingredients
- 1.5 L (6 cups) Selection chicken broth
- 1 can Selection diced tomatoes
- 15 mL (1 tablespoon) Irresistibles fine herbs
- 1 bay leaf
- 1 bag Selection frozen vegetable mix for soups
- 1 can Selection kidney beans, rinsed
- Salt and pepper to taste
- 375 mL (1 ½ cup) Selection Monterey Jack cheese cubes
Preparation
- In a large pot, bring the broth and tomatoes and their juice to a boil.
- Add the herbs and bay leaf and simmer for 5 minutes.
- Add the vegetables and cook for 10 minutes.
- Add the kidney beans and season. Cook for another 5 minutes.
- Serve very hot with the cheese cubes.
- Note: for a heartier soup, add 125 mL (1/2 cup) of soup noodles at the same time as the vegetables.
