Gourmet minestrone soup


Servings: 6 servings

Preparation time: 30 minutes

Ingredients

  • 1.5 L (6 cups) Selection chicken broth
  • 1 can Selection diced tomatoes
  • 15 mL (1 tablespoon) Irresistibles fine herbs
  • 1 bay leaf
  • 1 bag Selection frozen vegetable mix for soups
  • 1 can Selection kidney beans, rinsed
  • Salt and pepper to taste
  • 375 mL (1 ½ cup) Selection Monterey Jack cheese cubes

Preparation

  1. In a large pot, bring the broth and tomatoes and their juice to a boil.
  2. Add the herbs and bay leaf and simmer for 5 minutes.
  3. Add the vegetables and cook for 10 minutes.
  4. Add the kidney beans and season. Cook for another 5 minutes.
  5. Serve very hot with the cheese cubes.
  6. Note: for a heartier soup, add 125 mL (1/2 cup) of soup noodles at the same time as the vegetables.
