Tips for cooking and handling meat

Whether you want to roast, grill, sauté, sear, or braise meat, follow our artisan butchers’ advice for delicious results. Here are a few of their tips to get the best out of your cut of meat:

Here are a few tips to make sure you get the most out of your cut:

  1. Only salt your meat once you cook it to prevent it from drying out.
  2. Cook thin slices of meat over medium heat. It’s easy to overcook on high heat (the meat can become rubberized or burnt).
  3. Don’t poke holes in your meat. That will only make the juices and flavours seep out. Instead, use a pair of cooking tongs to handle it. Finally, use a meat thermometer to check if it is done to your liking.
  4. Line your baking sheet with parchment paper when roasting meat to ensure it's as juicy and tender as possible.
  5. When required, use a small piece of aluminum foil to cover the ends of bones to prevent them from burning as they cook.
  6. Use tongs to flip the meat halfway through cooking so you don’t pierce it and it is beautifully browned on both sides.
  7. To enjoy meat at its best, sear if first, especially if you’re preparing a thin cut. Quickly cook the surface of the meat at a high temperature to caramelize it and form a crust before roasting in the oven.

How do you enhance the flavour of meat?

Knowing how to cook and season your meat properly is the key to tasty results. And a rub or marinade is sure-fire way to enhance its flavour.

Dry rubs

Dry rubs are a combination of spices and herbs that you rub onto the meat before cooking. Add a bit of salt or sugar to the mixture according to your tastes. But if you want to tenderize your meat, you should use a liquid marinade with a hint of acid.

Don’t know how to prepare a marinade? It’s as easy as preparing a salad dressing. Combine a tablespoon of lemon juice or vinegar (cider, balsamic, or other) for a hint of acid with three tablespoons of olive oil or sour cream and the seasoning of your choice.

Looking for inspiration? Here is a Greek-style marinade that will give your meat a Mediterranean-inspired flavour.

  • 1 tablespoon lemon juice
  • 3 tablespoons Greek yogurt (or sour cream)
  • Add a bit of garlic and oregano and you’re all set!

For a marinade that will tenderize your meat and caramelize it during cooking, try this sweet and savoury combination:

  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • 1 tablespoon maple syrup

For guaranteed flavour, marinate your meat for about 8 hours in the fridge. Use glass containers, stainless steel bowls, or plastic resealable bags for the best results. The longer the meat marinates, the more flavours it will soak up!
