Here are a few tips to make sure you get the most out of your cut:

  1. Only salt your meat once you cook it to prevent it from drying out.
  2. Cook thin slices of meat over medium heat. It’s easy to overcook on high heat (the meat can become rubberized or burnt).
  3. Don’t poke holes in your meat. That will only make the juices and flavours seep out. Instead, use a pair of cooking tongs to handle it. Finally, use a meat thermometer to check if it is done to your liking.
  4. Line your baking sheet with parchment paper when roasting meat to ensure it's as juicy and tender as possible.
  5. When required, use a small piece of aluminum foil to cover the ends of bones to prevent them from burning as they cook.
  6. Use tongs to flip the meat halfway through cooking so you don’t pierce it and it is beautifully browned on both sides.
