Pasta with pink tofu sauce, au gratin

Ingredients

  • 450 g (1 lb) Selection short pasta
  • 30 mL (2 tablespoons) Selection olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 can (540 mL) Selection diced tomatoes with spices
  • 30 mL (2 tablespoons) Selection tomato paste with herbs and spices
  • 1 pack (300 g) soft tofu
  • Salt and pepper to taste
  • 80 mL (1/3 cup) fresh basil, chopped
  • 375 mL (1 ½ cup) Selection 4 cheese Italian blend or vegan shredded cheese
  • 60 mL (1/4 cup) breadcrumbs

Preparation

  1. In a large pot of salted boiling water, cook the pasta following the instructions on the package.
  2. Meanwhile, heat the oil in a medium pot on medium high and cook the garlic for 2 minutes. Add the tomatoes, reduce the heat to medium and simmer for 5 minutes.
  3. Add the tomato paste and tofu and simmer for another 5 minutes and stir frequently. Season with salt and pepper.
  4. Use a blender or immersion blender to reduce the sauce into a smooth texture and place back in the pot. Check the seasoning and add the basil.
  5. Set the oven on broil.
  6. Mix the sauce and pasta and pour into a rectangle oven-safe dish. Top with the cheese and breadcrumbs and broil for 1 to 2 minutes.
  7. Serve.
