Chicken croissant sandwich

Ingredients
- 4 butter croissants
- 750 mL (3 cups) cooked chicken, cut into small pieces
- 60 mL (1/4 cup) herb cheese spread
- 45 mL (3 tablespoons) Selection mayonnaise
- Pepper to taste
- 4 leaves of the lettuce of your choice
Preparation
- Preheat the oven to 180 oC (350 oF).
- Slice the croissants lengthwise but not completely, just enough to create an opening for the filling.
- Place the closed croissants on a baking sheet and warm up in the oven for 3 minutes.
- Meanwhile, combine the cheese, mayonnaise, pepper, and 15 mL (1 tablespoon) of cold water in a medium sized bowl. Add the chicken and mix thoroughly.
- Once out of the oven, divide the chicken mixture between the croissants. Add the lettuce and close the sandwiches.
- Serve with your favourite crudités.
