Almond crusted pork tenderloin

Ingredients
- 15 mL (1 tablespoon) Selection vegetable oil
- 10 mL (2 teaspoons) Selection butter
- Salt and pepper to taste
- 600 g (1 1/3 lb) fresh pork tenderloin, cut into 4 equal portions
- 450 mL (3 tablespoons) Selection honey Dijon mustard
- 5 mL (1 teaspoon) dried tarragon
- 125 mL (1/2 cup) crushed almonds
Preparation
- Preheat the oven to 200 oC (400 oF).
- In a large skillet, heat the oil and butter on high.
- Season the meat and sear it all sides.
- Remove the skillet from the heat, place the meat in a dish and coat with mustard. Sprinkle tarragon on top and roll every piece in the almonds. Place in the skillet again.
- Cook in the oven for 8 to 10 minutes or until done to your liking.
- Serve.
