Almond crusted pork tenderloin

Ingredients

  • 15 mL (1 tablespoon) Selection vegetable oil
  • 10 mL (2 teaspoons) Selection butter
  • Salt and pepper to taste
  • 600 g (1 1/3 lb) fresh pork tenderloin, cut into 4 equal portions
  • 450 mL (3 tablespoons) Selection honey Dijon mustard
  • 5 mL (1 teaspoon) dried tarragon
  • 125 mL (1/2 cup) crushed almonds

Preparation

  1. Preheat the oven to 200 oC (400 oF).
  2. In a large skillet, heat the oil and butter on high.
  3. Season the meat and sear it all sides.
  4. Remove the skillet from the heat, place the meat in a dish and coat with mustard. Sprinkle tarragon on top and roll every piece in the almonds. Place in the skillet again.
  5. Cook in the oven for 8 to 10 minutes or until done to your liking.
  6. Serve.
